They reminded us that real cheese is one of the most wholesome and nutritious foods one can eat. They taught us their time honored artisanal methods for making great cheeses, by hand, in small carefully nurtured batches, and affinage, to bring the cheeses to a fully mature flavor and texture by proper aging. They shared with us recipes for some of the world’s classic artisanal cheeses. We also learned from them the importance of place, where the cheese originates. Our place is the Pocono and northeast region of Pennsylvania, where the lush, rolling hill dairy pasture terroir is ideal for making real cheese. CONTINUED... |
