Our Creamery

CHEESE MAKING: All of our cheeses are hand made, in small carefully crafted batches, with recipes and methods inspired by European fine cheese artisans and connoisseurs.

 

Our cheese making process is completely by hand, following time honored methods of fine cheese artisans, slowly and carefully turning the qualities of the milk into cheese.

Each cheese starts with heating of the milk and at just the right temperatures adding small amounts of natural culture and rennet, specific to each, to form the curd.

All of our cheeses are produced to Pennsylvania Department of Agriculture food safety standards, with milk from Department certified dairy farms, and independently tested by Department authorized labs.
